Ingredienti
* 200 g pasta tipo Conchiglioni (io utilizzo @pasta_rummo )
Per il ripieno:
* 200 g @mozzarisella ahumada( o qualsiasi provola vegana)
* 400 g friarielli
* q.b. Sale
Per la salsa al pomodoro:
* 400 g di pomodorini ( io ho usato quelli del piennolo)
* 1 Spicchio di aglio
* 2 Cucchiai di olio extra vergine di oliva
* q.b. Sale
* q.b. Basilico fresco
* q.b. Peperoncino
* q.b. Pane grattugiato
Istruzioni
* Fai cuocere i conchiglioni in abbondante acqua salata scolandoli 2 min prima del tempo di cottura indicato sulla confezione, fai raffreddare sotto l’acqua fredda, poi scolali e mettili da parte.Tieni da parte un po’ d’acqua di cottura della pasta.

* Prepara il ripieno. Pulisci e cuoci i friarielli in padella con un goccio d’olio, uno spicchio d’aglio e un po’ di sale. Appena cotti, fai raffreddare e poi strizzali, togliendo l’olio in eccesso.
* Taglia a cubetti la mozzarisella ahumada
* Ora prepara la salsa al pomodoro. In una padella versa un filo d’olio, uno spicchio di aglio e un po’ di peperoncino.
* Fai rosolare per alcuni minuti ed aggiungi i pomodorini tagliati a metà , aggiungi del sale. Falli cuocere per almeno 15 minuti aggiungendo un po d’acqua della pasta quando serve.
* A fine cottura insaporisci con delle foglie di basilico fresco.

* Ora abbiamo tutto per creare il nostro piatto. Stendi un po’ della salsa di pomodoro in una pirofila.
* Con un cucchiaino prendi un poco di ripieno ( friarielli e cubetti di provola vegan)e farcisci ogni singolo conchiglione, adagialo poi nella pirofila, sopra la salsa.
* Procedi fino ad esaurimento degli ingredienti. E all fine ricompri i conchiglioni con la salsa che rimane ed il pane grattugiato.
* Imposta il forno a 180 °C gradi, metti la pirofila dentro e cuoci il tutto per 30 minuti.
* I conchiglioni ripieni sono pronti. Buon appetito!

ARANCINI RECIPE:⁠
Risotto base:⁠
Gently heat 1.5 cups risotto rice with 3 tbsp. of olive oil + 2 garlic cloves finely chopped for 2mins⁠. Add 120ml white wine and large pinch of saffron. Gradually add 3 cups vegetable stock water stirring continuously. Once the rice is cooked stir in 4 tbsp. nutritional yeast, pinch of salt and zest of 1/4 lemon (optional). Leave to cool in the fridge.⁠

To make the arancini balls:⁠
Weigh 95g risotto mix, place on a tea-towel over one hand and place mixture on top. Flatten out rice into circular shape. ⁠
Put a 1inch cube of @mozzarisella into the center and using the tea-towel fold up sides and tighten into a ball shape. Roll in flour and then repeat with rest of the rice. Next, mix flour and water in a bowl to create a thick cream texture. Roll balls into wet flour mix until coated then roll into panko breadcrumbs until completed coated. Deep-fry balls until golden. Drain on kitchen paper.⁠ Serve with garlic ailoi and/or a tomato dipping sauce.⁠
